This is our take on the Italian classic melone e prosciutto, that perfect combination of sweet melon and salty cured ham, reimagined for the pizza oven with a few carefully chosen extras. The flavours here are built to work with an Aperol Spritz. The melon swirl mirrors Aperol’s bittersweet orange notes, the peppery nasturtium flowers pick up the herbal botanicals in the glass, and the saltiness of the pecorino and prosciutto makes every sip taste better than the last.
