This pizza celebrates mortadella and the special place it has in the heart of the famous food city of Bologna. Expect slices of Mortadella, draped over parmesan cream and mozzarella, topped with onions in aged balsamic vinegar. Bellissima!
Emilia-Romagna region’s most famous cured meat is cooked in a production method that has been crafted for centuries. The local oak forests traditionally fed the local wild pigs to create Mortadella Bologna. Going back even further, a mortar would be used by ancient Romans to tenderise and knead pork meat together with pork fat, salt and spices, a technique still used today.
Watch the well-known Italian love song by Lucio Dalla, ‘Caruso’. Born in Bologna, Dalla’s connection with Naples is reflected in the song which was written in Sorrento. An icon of Italian music, a heartfelt tribute to Naples, and a lovely link between the two cities.
